1/2 pound crumbled feta cheese
2 tablespoons extra virgin olive oil
1 teaspoon finely chopped pepperoncini peppers
1/2 teaspoon dried chili flakes
1 teaspoon minced garlic, about 1 large clove
1 teaspoon finely chopped, fresh oregano
1 tablespoon lemon juice
1/8 teaspoon freshly ground black pepper
Toasted pita, as an accompaniment
In a food processor or blender, mix together feta, olive oil, pepperoncini, chili flakes, garlic, oregano, lemon juice, and black pepper. Blend on low speed 3 to 4 minutes, or until the mixture has a whipped consistency. Pour in lemon juice, and pulse about 2 minutes, or until completely combined. Pour into a bowl, cover and refrigerate for at least 1 hour or until ready to use. Serve with toasted pita.
